2 Ingredient Lemon Mousse
Fascinated by 2 Ingredient recipes, I had recently made the Lemon Bars and was impressed. So once again needing a contribution to a community dinner, I forged ahead and attempted the very easy, time saving, 2-ingredient Lemon Mousse.
Whipped Cream and Lemon Curd was all that was required. As for measurements, all I needed to know was to work with a 1 to 2 ratio. If you use a 1/2 cup of lemon curd, then use 1 cup of whipped cream. I prefered to make my own whipped cream. It’s so easy, cheaper and so very delicious!
It’s only heavy cream with a pinch of sugar and a pinch of vanilla.
Whip it with a beater until it looks like stiff cream. So easy to make and so yummy!
You can see it forming into a whipped cream in only a few minutes.
Once you have whipped cream, drop in the lemon curd and beat the two together. Interestingly the two ingredients resemble an egg. Beat until mixed. It is permissable to mix to a point where you leave tiny pieces of curd whole to resemble tapioca. It does make the mousse look interesting.
And there you have it. Lemon Mousse. If you want to fancy it up, you can purchase those little pie crusts and fill with the mousse.
Add a topper of whipped cream.
Wonderful Mini Lemon Cream Pie. And may I add that this Lemon Mousse is delicious! A great big YUM!
